Edamame Fritters w/ Mixed Greens & Creamy Roasted Garlic Dressing

This in thee best dressing I’ve ever made!! Save it! It’s creamy, it’s garlicky, protein packed and oh yeah... it’s #dairyfree & oil free!!
Honestly, the salad and the fritters are just an excuse to post this creamy roasted garlic recipe!
I was experimenting in the kitchen and was actually trying to see if I could make a hempseed milk! But before I added too much water, this beautiful, delicious base came about. The best part.. base of this creamy dressing is only 2 ingredients: hempseeds & water!
I had previously roasted full heads of garlic from the farmer’s market ready to go in the fridge (home cook tip to quickly add a ton of flavor to your cooking 😉).
Dressing Ingredients:
6 TBS Hempseeds @manitobaharvest
1/2 Head of Roasted Garlic (you can totally use garlic powder or a little raw garlic to your preference)
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/2 Zest of a Lemon
Splash of water to reach your desired consistency
Salt to taste
Directions:
Blend all dry ingredients together, then slowly add water (or lemon juice, I just used water + lemon zest and it was still tangy!) See video below for creamy consistency.
Edamame Fritter Ingredients:
1 cup Edamame Beans (I used frozen, just soaked quickly in hot water to defrost)
2 Tbs Mirepoix (I had this already cooked in the fridge, celery, onions, garlic, carrots & dried thyme).
Blend edamame until it’s completely mashed. In a bowl, add edamame mixture + mirepoix, form into patties. Makes 4 patties. Serves 2
