Let’s face it.. it’s all about the sides during the Holidays! With so many side dishes we want to eat/ cook, who has time for a laundry list of ingredients to make each dish?
This is a simple casserole that you can whip up quickly and still makes a substantial side! It’s all about the texture- without adding dairy!
Main Ingredients (Makes 6 side portions)
- 1 package Frozen Corn (16oz, thawed or fresh)
- Panko Breadcrumbs (topping)
- Dairy Free Butter (optional)
Spices:
- Garlic Powder, to taste
- Salt, to taste
- Nutritional Yeast (1tbs, optional)
- Smoked or Regular Paprika (just sprinkle over panko topping)
Directions:
1. Preheat oven to 425.
2. Blend 1/2 of the corn (8oz) with garlic powder & salt.
3. In a separate bowl, fold in creamed corn mixture & 2 tbs melted butter (optional) with the rest of your whole kernel corn (8oz).
4. Spray a square baking dish with non-stick spray and pour in your corn mixture.
5. Top with panko breadcrumbs and paprika for added texture & color.
6. Bake for 15-20 minutes until topping is golden brown.
Notes:
1. I gave my panko topping a light spray (used avocado oil spray, any spray will do) to prevent burning.
2 You can also let cool before serving for easy cutting/ serving presentation
